Jimmy Macken and his wife Tam have a serious passion for cooking meat over wood. They learned how to pit smoke ribs and brisket in Texas from some of the best in the world, built a 16ft BBQ Pit smoker, shipped it home to New Zealand and have been cooking up meals for the masses on the Bare Knuckle BBQ ever since.
